The origin story of these vegetarian dishes starts with the Espoo Story and the shared sustainable development goals of Espoo Catering and the city. Since 2015, vegetarian dishes have been developed in cooperation with students under the #Papuposset slogan through recipe competitions.
These vegetarian dishes were created last spring in cooperation with Martinkallio’s home economics pupils in grades 7–9. The pupils proposed three recipes for vegetarian meals: seitan sauce, puréed vegetable soup and noodle stir-fry.
The kitchen at Martinkallio tested the recipes and then prepared and served them for school lunch. Every pupil of the school got to taste the dishes and vote for their favourite for inclusion in school menus.
The event will feature a tasting of the puréed vegetable soup and a seitan casserole developed from the seitan sauce recipe.
